TRADITIONAL ITALIAN TRUFFLE FARROTTO RECIPE

Ingredients:

 

240 grams of pearl spelt

60 grams of pecorino or parmesan cheese

1 onion

60-80 grams of black truffles

½ cup dry white wine

Butter, salt and meat or vegetable broth to taste

 

Directions:

 

Brown the chopped onion in butter, add the white wine and let it evaporate.

Add the spelt, the salt and continue to cook for at least 45 minutes.

Stir frequently and gradually add the hot broth.

In the meantime break into small pieces the truffle, and make it creamy cooking it over low heat for 1 to 2 minutes. Add even the spelt, cheese and proceed to mix everything well.

Bottegaio's tips:

Place the spelt into a serving dish and add the remaining truffle above that you have previously cut into flakes.

 

Wine pairing: both white and red wine are suitable for serving with truffle farrotto but they must still have an intense and persistent bouquet and a little structure. Some examples are: Complex Chardonnays (Meursault, Puligny-Montrachet), Savennières, Vouvray, Barolo, Barbera, Vosne-Romanée.
